Ingredients

Main Ingredients
  • 8 large fresh garlic cloves peeled
  • ¼ cup fresh lemon juice
  • 3 tablespoons aquafaba liquid from canned chickpeas
  • 1 cup neutral oil avocado oil or sunflower oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
Optional Ingredients
  • 2 tablespoons plain Greek yogurt for a creamier, milder version
  • Freshly ground black pepper to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley

Equipment

  • 1 High-Speed Blender or Food Processor Creates a smooth emulsion
  • 1 Measuring Cups & Spoons For accurate measurements
  • 1 Citrus Juicer Fresh lemon juice gives the best flavor
  • 1 Rubber Spatula Scrape down the blender sides
  • 1 Glass Jar with Lid For storing the dressing

Method

  1. Peel the garlic cloves and remove any green sprouts. Add the garlic to a food processor or high-speed blender.
  2. Add the lemon juice, aquafaba, Dijon mustard, and kosher salt. Blend for about 1 minute until the garlic is finely pureed.
  3. With the blender running on low speed, slowly drizzle in the oil in a thin, steady stream until the dressing becomes thick, creamy, and smooth.
  4. Taste and adjust with additional lemon juice or salt if needed. For a milder flavor, blend in the optional Greek yogurt.
  5. Transfer the dressing to an airtight glass jar and refrigerate for at least 30 minutes before serving.
  6. Stir or shake well before serving, then drizzle over salads, grain bowls, roasted vegetables, grilled meats, wraps, or use as a dipping sauce.

Notes

  • Fresh garlic provides the best flavor.
  • Always use freshly squeezed lemon juice.
  • Pour the oil slowly to achieve a creamy emulsion.
  • Refrigerating the dressing improves both flavor and texture.
  • Natural separation may occur during storage—simply shake before serving.
  • Avoid freezing, as it can affect the texture.
